3 zucchini (or zucchini and yellow squash), tops removed, sliced in halves length-wise
Salt and pepper
1/2 tsp garlic powder
Extra virgin olive oil
Juice of 1/2 lemon (about 1 tbsp lemon juice)
Zest of 1 whole lemon
1/2 cup crumbled feta cheese
Cherry tomatoes chopped
1 green onion, chopped
Lightly oil the grate of an outdoor gas grill. Preheat the grill to medium-low.
Season the zucchini with salt, freshly ground pepper and garlic powder. Drizzle generously with extra virgin olive oil. Work the zucchini in the olive oil so that all slices are well coated on both sides.
Cook on the preheated grill until softened and nicely charred, about 3 to 4 minutes on each side.
Remove the zucchini from the grill. Add a little more extra virgin olive oil, the lemon juice and lemon zest. Top with the feta, tomatoes and onions.
