Sausage, Egg and Avocado Breakfast Sandwich

Ingredients
1 pound bulk pork (or chicken) sausage
1 tsp fennel seeds
1 tsp salt
1/2 tsp ground pepper
1/2 tsp sage
1/2 tsp onion powder
1/2 tsp allspice
1/4 tsp garlic
1/4 tsp cayenne
Eggs as desired, scrambled
Head of iceberg lettuce
1 tomato, sliced
Guacamole, as desired
1 Tbsp olive oil or coconut oil

Directions
Combine all the dry seasonings above in a small container
Place the uncooked sausage in a large mixing bowl, and sprinkle the seasoning mix over. Gently mix the seasonings into the sausage with your hands
Gently form 4-6 sausage patties
Add 1 Tbsp of oil to a skillet over medium heat. Cook patties thoroughly until internal temperature reads160ºF, and set aside
Scramble eggs and mix the guacamole as desired
Stack and wrap with lettuce leaves as shown, and secure wrap with toothpicks if necessary
