Lamb Burgers and Greek Salad

Lamb and Mint Burgers
  • 500g lamb mince
  • ½ cup fresh mint chopped
  • 2-3 tbs fresh or dried rosemary
  • salt and pepper to taste
Greek Salad
  • black olives
  • feta cheese
  • red onion rings
  • cucumber diced
  • tomatoes diced


Lamb and Mint Burgers
  1. Place the lamb mince in a bowl and break it up with a spoon.
  2. Add the mint and rosemary and mix together with your hands to get the flavours worked through.
  3. Mould into burger shapes as firmly as you can. The harder you press the mince mixture into shape, the better it will stay together when cooking.
  4. Heat some olive oil in a frying pan on a moderate heat, and cook until browned then turn over and cook the other side. It usually takes about 5-8 minutes on each side.
Greek Salad
  1. Place all the salad ingredients together in a serving dish and gently mix. I haven’t given quantities as everyone likes their Greek salad slightly differently.
  2. Drizzle with olive oil.
