Mexican Turkey Skillet


  • 2 Tbsp olive oil
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 4 cloves garlic, minced
  • 11/2 lb ground turkey
  • 2 Tbsp chili powder
  • 1 tsp ground coriander
  • 1/2 tsp salt,1/2 tsp pepper
  • 1 (14.5-oz) can diced tomatoes, drained
  • 1/4 cup chopped fresh cilantro


Heat oil in a large skillet over medium-high heat. Add onion, bell pepper and garlic. Cook 6 minutes or until tender, stirring frequently. Add ground turkey, chili powder, coriander, salt and pepper. Cook 5 minutes or until done. Stir in tomatoes and cilantro; cook 4 minutes or until thoroughly heated.
